Spicy Honey Chicken

I came across this recipe early in the summer and it has quickly become one of our go-to grilled chicken recipes.  It's quick and easy, but has a lot of taste and bang for it's buck.  Plus, the ingredients are pretty much something we always have on hand (well, I've adapted the original recipe to use spices we do always have on hand), which is convenient and not only that, but Ben gets to grill and help with preparing dinner; something I love and I think makes him feel "manly".

Spicy-Honey Chicken

Ingredients:
(Serves 3-6; depending how much chicken you use*)
  • 1 to 2 lbs chicken breast
  • 2 Tbsp olive oil
  • 1/2 Tbsp minced garlic
  • 2-1/2 tsp chili powder
  • 1/2 tsp onion powder
  • 1/2 tsp coriander
  • 1 tsp salt
  • 1 tsp cumin
  • 1/4 cup honey
  • 1 tsp cider vinegar
  • *We typically use around one pound of chicken, so we have plenty of excess rub/marinade; you could probably decrease the proportions if you want

Directions:
  • Smash/break up coriander:  I usually do this by putting it in a bowl or plastic baggie and smash with a spoon or rolling pin
  • Combine all spices/garlic in a small bowl 
  • Coat chicken breast with olive oil
  • Apply rub to all sides of chicken breast
  • Put honey in bowl and microwave for ~20 seconds; just enough to thin it up.  Mix in vinegar.
(I reused my spice bowl; so there were some leftovers in there)
  • Drizzle honey/vinegar over chicken
  • Let sit for approximately 30 minutes (this just allows the honey to marinade the meat a bit)
  • Grill chicken for 3-5 minutes on each side until thoroughly cooked
  • Enjoy!
