Spicy-Honey Chicken
(Serves 3-6; depending how much chicken you use*)
- 1 to 2 lbs chicken breast
- 2 Tbsp olive oil
- 1/2 Tbsp minced garlic
- 2-1/2 tsp chili powder
- 1/2 tsp onion powder
- 1/2 tsp coriander
- 1 tsp salt
- 1 tsp cumin
- 1/4 cup honey
- 1 tsp cider vinegar
- *We typically use around one pound of chicken, so we have plenty of excess rub/marinade; you could probably decrease the proportions if you want
Directions:
- Smash/break up coriander: I usually do this by putting it in a bowl or plastic baggie and smash with a spoon or rolling pin
- Combine all spices/garlic in a small bowl
- Coat chicken breast with olive oil
- Apply rub to all sides of chicken breast
- Put honey in bowl and microwave for ~20 seconds; just enough to thin it up. Mix in vinegar.
(I reused my spice bowl; so there were some leftovers in there) |
- Drizzle honey/vinegar over chicken
- Let sit for approximately 30 minutes (this just allows the honey to marinade the meat a bit)
- Grill chicken for 3-5 minutes on each side until thoroughly cooked
- Enjoy!
