Blueberry Muffins

Last week I bought blueberries with the intention of making blueberry mojitos but then I got lazy.  I used some in pancakes, but still had a good amount left.  To avoid them going to waste (and not wanting to get wasted on a Sunday), I decided to make some good ole' blueberry muffins.

Blueberry Muffins

Ingredients:
(Makes 8-10 muffins)

Muffins
  • 1.5 cups AP flour
  • 3/4 cups white sugar
  • 1/2 tsp salt
  • 2 tsps baking power
  • 1/3 cup vegetable oil
  • 1 egg
  • 1/3 cup milk
  • 1 cup blueberries
Crumb Topping:
  • 1/2 cup white sugar
  • 1/3 cup AP flour
  • 1/4 butter, softened
  • 1.5 tsps ground cinnamon

Ingredients
Directions:
  • Preheat oven to 400 degrees F
  • Line muffin pan
  • Combine all dry muffin ingredient items (flour, sugar, salt and baking soda)
  • Mix in all liquids (oil, egg, milk)
  • Gently mix in blueberries
  • Pour into muffin tin
  • Combine crumb topping ingredients (sugar, flour, butter, cinnamon)
  • Pour over muffins
  • Bake for 20 minutes or until done
Mixed crumb topping
