Last week I bought blueberries with the intention of making blueberry mojitos but then I got lazy.  I used some in pancakes, but still had a good amount left.  To avoid them going to waste (and not wanting to get wasted on a Sunday), I decided to make some good ole' blueberry muffins. 
Blueberry Muffins 
Ingredients:
(Makes 8-10 muffins)
Muffins
- 1.5 cups AP flour
 - 3/4 cups white sugar
 - 1/2 tsp salt
 - 2 tsps baking power
 - 1/3 cup vegetable oil
 - 1 egg
 - 1/3 cup milk
 - 1 cup blueberries
 
Crumb Topping:
- 1/2 cup white sugar
 - 1/3 cup AP flour
 - 1/4 butter, softened
 - 1.5 tsps ground cinnamon
 
| Ingredients | 
- Preheat oven to 400 degrees F
 - Line muffin pan
 - Combine all dry muffin ingredient items (flour, sugar, salt and baking soda)
 - Mix in all liquids (oil, egg, milk)
 - Gently mix in blueberries
 - Pour into muffin tin
 - Combine crumb topping ingredients (sugar, flour, butter, cinnamon)
 - Pour over muffins
 - Bake for 20 minutes or until done
