Chicken Gyros
Ingredients:(Makes 4)
For the Chicken:
- ~1.25lbs (2 pieces) of chicken breast
- 1/2 cup olive oil
- 2 Tbsp lemon juice
- 2 Tbsp minced garlic
- 1 tsp dried oregano
- 1/2 tsp cumin
- 1/2 tsp onion powder
- 1/2 tsp garlic salt
- 1/2 cucumber
- 1 8oz container of greek yogurt
- 1 Tbsp lemon juice
- 1 tsp minced garlic
- 1/4 tsp garlic salt
Additional/Option Items:- Pita
- Lettuce
- Tomato
- Onion
- Feta cheese
Directions:For the Chicken:
- Mix together marinade
- Cut chicken into small pieces (~1"x2")
- Marinade chicken for at least two hours (I typically marinade over night)
- Cook on stove top over medium heat
For the Sauce:- Mince cucumber (I usually leave the rind out. You could peel the rind off and use grater to get fine shreds if preferred)
- Mix together sauce ingredients
Last step? Put all of the above together!
Hint: I've had the most luck with my "assembly" when I put the sauce on the pita first and then add on my toppings. I've also eaten this as a salad (sans pita), which is delicious.
