Simple Summer Salad

During the warm summer months, my appetite always changes. Often times I feel like I eat less (that's probably in my head), but I also know I like to eat lighter. 
 
I've gotten into the recent habit of minimizing our dinner sizes (no leftovers as I like to do in winter for lunches). Instead, on Mondays during lunch I walk to the grocery store and pick up fixings for a salad for the weeks lunch.
 
Ben is a picky eater (that's an understatement) so I often struggle to feel like I'm eating enough vegetables.  Having a salad for lunch four days a week makes me feel better object my fruit and vegetable intake, usually guaranteeing I'll get at least one of each in my salad.
 
Here's my recent favorite.
 
Simple Summer Salad
Ingredients:
(The following costs my about $12 and yields 4 salads)
  • 10 ounce bag fresh spinach
  • 1 lb strawberries
  • 1 pint blueberries
  • 1 container bleu cheese
  • Raspberry vinaigrette salad dressing (I like Newman's)
Directions: It's pretty mindless to make a salad. Be sure to rinse all items, especially fruit.  Cut strawberries into bite size pieces. Pile together and enjoy!
 


Mix it up as you like it. I used to add cucumber slices but decided I like it better without.  You could also add a protein (like grilled chicken; I eat a Greek yogurt for my mid-morning snack so I forgo).
