Chicken Gyros

As the temperatures warm up, our eating habits often "lighten" up.  While perusing Pinterest one day, I came across this recipe for chicken gyros.  Our life will never be the same. It is simple, easy, and really pretty good for you.  It's recently become a biweekly staple in our house.

Chicken Gyros

Ingredients:
(Makes 4)
For the Chicken:
  • ~1.25lbs (2 pieces) of chicken breast
  • 1/2 cup olive oil
  • 2 Tbsp lemon juice
  • 2 Tbsp minced garlic
  • 1 tsp dried oregano
  • 1/2 tsp cumin
  • 1/2 tsp onion powder
  • 1/2 tsp garlic salt
 
For the Sauce:
  • 1/2 cucumber
  • 1 8oz container of greek yogurt
  • 1 Tbsp lemon juice
  • 1 tsp minced garlic
  • 1/4 tsp garlic salt


Additional/Option Items:
  • Pita
  • Lettuce
  • Tomato
  • Onion
  • Feta cheese

Directions:
For the Chicken:
  • Mix together marinade
  • Cut chicken into small pieces (~1"x2")
  • Marinade chicken for at least two hours (I typically marinade over night)
  • Cook on stove top over medium heat
 

For the Sauce:
  • Mince cucumber (I usually leave the rind out.  You could peel the rind off and use grater to get fine shreds if preferred)
  • Mix together sauce ingredients

Last step? Put all of the above together! 


Hint: I've had the most luck with my "assembly" when I put the sauce on the pita first and then add on my toppings.  I've also eaten this as a salad (sans pita), which is delicious.
