Cilantro Lime Crockpot Chicken Tacos

Whew is that a mouthful! And even more, this post is a handful. Not only do I have the recipe for the main meal, but I also have chipotle taco seasoning and pico de gallo recipes for you too. Buckle up and get your taste buds ready!
 
I found this recipe for the chicken via Pinterest and we've been making it once every two weeks this summer. It's great to come home and not have to slave over a hot stove top or grill. Plus, I had plenty of veggies from the farmer's market that I needed to put to use.
 
Cilantro Lime Crockpot Chicken

Ingredients:
(Makes ~3-4 servings depending on amount of chicken used)
  • ~1lb chicken breast
  • 2 limes
  • 1/2 cup cilantro
  • 1 tsp dried minced onions
  • 1 packet taco seasoning (see alternative recipe for seasoning below)
  • 1 cup water
Directions:
  • Rinse cilantro and mince
  • Cut limes in half
  • In a bowl, mix together minced onions, taco seasoning and water
  • Place chicken in crockpot and pour seasoned water over chicken
  • Pour cilantro on top
  • Squeeze lime juice on top of mixture (hint: use a knife to create a slit in the lime half for easier squeezing)

  • Cook on low for ~8 hours
  • Use fork to shred meat (all liquid will mix in)
  • Serve on tortillas with your favorite toppings, such as queso fresca and pica de gallo (recipe below)

Chipotle Taco Seasoning
I've been caught off guard a few times now having planned a taco meal only to realize I forgot to buy a pack of taco seasoning. This is recipe is quick and easy way to make your own seasoning and the recipe below has a chipotle spin on it.
Ingredients:
  • 1/2 tsp Onion powder
  • 1 Tbsp Chili powder
  • 1 1/2 tsp Cumin
  • 1 Tbsp Chipotle chili (similar)
  • 1/2 tsp Garlic salt
  • 1/4 tsp Crushed red pepper
  • 1/4 tsp Oregano
Directions: Mix together in small bowl

Pico de Gallo
It's safe to say I'm obsessed with homemade salsa, but I've recently discovered a "fresh salsa" from my grocery store deli counter that I would describe more as pico de gallo. Having the opportunity to buy all of the ingredients fresh at the farmers market, I decided as a topping for tacos, I wanted to keep it chunky. This was my first time making this, based on this, and it turn out just as I'd hoped.
Ingredients:
(Makes ~2 cups)
  • 2 ripe tomatoes
  • 1/2 yellow onion
  • 1/2 jalapeno pepper
  • 1/4 cup cilantro
  • 1/2 tsp garlic salt
Directions:
  • Chop the tomatoes into small cubes and drain juice/seeds
  • Chop remaining ingredients (onion, cilantro and jalapeno); mix together with tomato and garlic salt
  • Let sit in fridge for 30 minutes for flavors to combine
 
One more thing...
 

Often times when I post meals on FB or IG, I have several friends who question if Ben actually eats what I make, knowing how picky he is...so, did Ben eat this?
Hell no! In fact he was so embarrassed when I tried to take a picture of his tacos, he tried to hide them.
But, I was able capture a quick shot. Yep, anytime I made anything "Mexican" it's safe to bet my plate will be covered with some type of tomato mixture and Ben's will be covered in cheese.
