BBQ Chicken Pizza

Do you have get the idea for a meal in your head and all you can think about is how good it sounds?  For about a week or so, I had a craving for BBQ Chicken Pizza, which is strange because I don't usually like "specialty" pizzas (besides Ian's, now Dimo's Pizza, of course).  Yet, I couldn't get the thought out of my head.  My sister-in-law mentioning making it a few weeks back and said it turned out good so, I thought what the heck.

Well, it ours didn't turn out good, it was AMAZING!


BBQ Chicken Pizza

Ingredients
(Note: Our pizza was half adult for me and half "kid" style for Ben; the ingredient amounts I'm posting below are for a full "adult" pizza)
  • Pizza Crust (I bought premade dough from Whole Foods)
  • ~3/4 lb chicken breast cut into small 1"x2" pieces
  • 2 tbsp olive oil
  • 1 tsp minced garlic
  • Dash of salt and pepper
  • 1.5 cups of your favorite barbecue sauce (Sweet Baby Ray's original is our to-go)
  • 3/4 cup sliced cilantro
  • 1/2 cup sliced red onion
  • 1.5 cups mozzarella cheese
Directions
  • Preheat oven to 425 degrees F
  • Over medium heat; add olive oil to pan
  • Cook chicken with garlic, salt and pepper
  • When almost thoroughly cooked; add 3/4 cup of BBQ sauce
  • Use spatula to break chicken into smaller pieces/shred
  • Roll out pizza crust onto pregreased pan and baked for 10 minutes (This prebake allows the crust to bake some so that it won't be doughy later on
  • After prebaking crust; start from the middle and spread the remaining 3/4 cup of BBQ sauce with the back of a spoon in the circular motion on crust
  • Add chicken/BBQ mixture
  • Add cheese
  • Top with cilantro and onion
  • Bake for approximately 12 minutes or until cheese is melted
